1. Recipe: Kit’s Quick (Somewhat Low Cal) Mexy Lasagna
You can use stale tortillas and leftover chicken for this recipe, and it only takes about 15 minutes to prepare and serve!
Ingredients:
15 oz. can of black beans
6 corn tortillas (stale ones are fine to use)
1 or 2 cooked, skinless, boneless chicken breast(s),cut into small pieces
1 1/2 to 2 cups shredded mozzarella or Jack cheese
7 oz. Salsa Verde (or whatever mild hot sauce you have)
Directions: Coat a 7 or 8-inch circular casserole dish with nonstick spray and place 2 tortillas in the bottom. Drain off most of the liquid from the can of beans and pour 1/3 of its contents onto the tortillas. Sprinkle 1/3 of the chicken bits on top, then 1/3 of the shredded cheese followed by and 1/3 of the salsa verde. Add another layer of tortillas, beans, chicken cheese and salsa. Repeat for the final layer. Place the casserole dish on a plate and microwave for 10 minutes. Garnish with cilantro, avocado and more cheese, if desired. Makes 4 servings.

You'll discover how to define your personal style, how to create new furniture arrangements, and how to balance a room with color. Quick, easy accessorizing techniques for bookcases, artwork and displaying collections will also be shared.

3. It’s Flea Market Season!

4. Save the Date
Please come to my annual Arts and Crafts Sale and Open House on Saturday, November 17th from 12 to 5 PM. You are welcome to tour my home and also to shop for jewelry, paintings, sculpture pieces, greeting cards and other crafts created by artisans who set up tables throughout my home (I also sell my artwork).
