2) Recipe
Lean Oreo Cookie Cheesecake
Ingredients:
2 cups (16 oz tub) non-fat cottage cheese
2 pkgs. (16 oz., total) non-fat cream cheese
6 large egg whites (or 3/4 cup egg substitute)
1/4 cup all-purpose flour
2 teaspoons vanilla
1/2 cup sugar
16 reduced fat Oreo cookies
Crust: 9 oz. (1 pkg.) dark chocolate wafer cookies
1 egg white or 1/4 cup egg substitute
1/4 cup sugar, if you like a sweeter tasting cheesecake.
Directions for crust: In blender or food processor whirl chocolate wafer cookies and sugar to make fine crumbs. (It should make around 2 1/2 cups). Whirl in 1 large egg white until evenly moistened. Press crumbs over bottom and 1/2 inch up sides of a 9-inch spring pan. Bake at 300 degrees until firm---about 20 minutes.
Directions for cheesy stuff: In food processor puree cottage cheese, cream cheese, egg whites, flour, vanilla and sugar until smooth. Pour 2/3 of cheese mixture into crust. Break cookies in half and sprinkle over mixture, overlapping cookies if necessary. Pour remaining cheese mixture over and around cookies. Place pan on cookie sheet and bake at 300 degrees for about 25 to 30 minutes or until filling barely jiggles when shaken. Remove from oven and run a knife around edge of crust and pan. Cool for 30 minutes. Cover and chill for 4 hours or more. Remove pan rim and serve.
